French Toast Sandwich for Dinner

We did our first breakfast for dinner and it was sooooo worth it! We did our take on a waffle sandwich by subbing the french toast. I made the toast and the potatoes and Tamera did the side dish of fruit and the sausage and egg scramble that went in between the toast. So...first the recipe for the french toast, then the potatoes and finally egg/sausage scramble!




French Toast Ingredients

I like to use thick bread, but any bread will work. For this recipe, I used sliced brioche and it was just fantastic. So....for the batter...

  • 4 large eggs

  • 1 cup milk

  • 1/2 cup brown sugar

  • 1 tablespoon ground cinnamon

  • 1 tablespoon vanilla extract

  • 8 thick slices bread


Instructions

  • Preheat griddle or pan to a bit more than medium heat and grease with butter.

  • Add all ingredients in a bowl and whisk together, then pour into a pic pan.

  • Once combined, dip bread slices into the egg mixture, dredging them well on both sides, and place on hot, greased griddle or skillet.

  • Cook for a few minutes, until the bottom of the breads starts to get golden brown. Flip and cook on the other side the same. You can just serve with syrup and butter and sprinkle with powdered sugar.

  • In our case, we used them for our sandwich.


Hash Brown Ingredients/Instructions

  • Shred two large russet potatoes and I also shredded red potatoes as well. Really any kind works!

  • Shredded some white onion and bell pepper.

  • Grease pan with butter and add potatoes, onions and bell pepper to skillet over medium heat.

  • salt and ground black pepper to taste

  • 1 pinch paprika to taste

  • garlic poder, onion powder and cayenne to taste.


Sausage & Egg Scramble Ingredients/Instructions

  • 6 ounces ground sausage,

  • 1/2 medium onion, chopped

  • 1/2 medium green bell pepper, seeded, chopped

  • 6 large eggs

  • salt and pepper to taste

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cumin

  • 1 teaspoon garlic powder


Combine all the ingredients in a bowl except the sausage and whisk them together. You can add milk if you want...just a tad...you can also add cheese and other veggies, it's really up to you.

Brown sausage about 3/4 of the way cooked in a skillet and make sure to chop it up into marble sized pieces. Then add the egg mixture and cook all together until the eggs are cooked...about 4-5 minutes.


WHEN EVERYTHING IS COOKED

Plate the potatoes. Then cut a square of the egg/sausage and put between two slices of French Toast...like a sandwich. Drizzle with warm syrup and EAT!!
