Corn Salad

We had our Caribbean Night and the jerk chicken was on point and spicy as can be! So with that, you want a nice and refreshing and crisp salad so as to not overwhelm the palate and thus balance the taste buds. This was my first corn salad and it was a hit....we enjoyed it the next day for lunch all by itself. I used fresh corn and just blanched it basically...you can use defrosted as well....the sweeter the better...but you want it firm. You literally just toss all these ingredients together.....it is that EASY!



INGREDIENTS -4 cups fresh or frozen corn (defrosted) -1 cup cherry tomatoes, halved

-1 cup red onions chopped

-1 avocado chopped -1/2 cup crumbled feta -1/4 cup of chopped basil

-1 Lime juiced

-1/4 cup apple cider vinegar

-coarse sea salt to taste

-garnish with Cilantro
