So we've done some Asian themed night for food, but we decided to go ALL IN for our first ever Chinese cuisine night. I decided to make spring rolls and chow mien and the dipping sauce for the rolls and Tamera made the fried rice. It was all fantastic and fresh and fun. Sooooo here we go!
Ingredients for Egg Rolls
1 pound ground turkey, pork or chicken
2 tablespoon minced garlic
1 tablespoon minced ginger
6 cubs of shredded cabbage
1/2 cup sliced green onions
1/2 cups shredded carrots
2 tablespoons soy sauce
1 tablespoon of toasted sesame oil
20 egg roll wrappers
salt and pepper to taste
oil for frying
Instructions for Egg Rolls
Spray the wok with sesame oil, or grapeseed oil.
Heat the wok over medium to high heat.
Add the ground meat and cook for about 5 minutes
add the garlic and ginger and mix it together with the meat while it is cooking
Stir in the cabbage and green onions. Cook 3-4 minutes.
Stir in the soy sauce and sesame oil, then remove from heat and drain.
Spoon filling onto each egg roll wrapper and fold and roll....instructions are usually on the package! Use either a beaten egg, or a little flour and water mixed to gather to seal rolls.
Pour 3 inches of oil into the wok and heat on high.
Fry 3-4 egg rolls at a time, turning occasionally, until browned all over, approximately 3-5 minutes. Then drain and serve with the dipping sauce.
Ingredients for Dipping Sauce
2 cups rice vinegar
1 cup sugar
2 tablespoons of agave sweetener (you can also use honey)
2 teaspoons fresh ginger root, minced
1 tablespoon of minced garlic
2 teaspoons hot chile pepper, minced or chili flakes
2 teaspoons ketchup
1 teaspoon chili garlic sauce
MIX IT ALL TOGETHER.
Ingredients for Chow Mein
1 (16-ounce) package Hong Kong-style pan-fried noodles
2 cups of chopped broccoli
1 cup of chopped green onions
2 cups iof chopped zucchini
1/4 cup oyster sauce
1/4 cup of rice vinegar
1/4 cup soy sauce
3 tablespoons of minced garlic
2 tablespoons freshly grated ginger
Salt and freshly ground black pepper, to taste
1 cup bean sprouts
Directions for Chow Mein
-In a small bowl, whisk together the vinegar, oyster sauce, soy sauce, garlic and ginger.
-Spray a wok with grapeseed, or sesame oil. Heat wok over medium to high heat. Add noodles and cook, stirring constantly, until golden brown....then toss in the veggies....you can also add more veggies if you want. Stir them into the noodles and then pour the sauce over it all and mix it well. Cover with a wok cover to let it steam for a couple of minutes. Then once combined and cooked.....serve it!!
